In this recipe, instead of cucumber, Greek yogurt is substituted with cauliflower, which offers more nutrients and is low carb.
I’ve never been a big fan of the traditional white tzatziki sauce, which is usually made from yogurt, cucumbers and mint. Too many people are intimidated by yogurt, which is a shame, since it’s the perfect ingredient to use when making Greek dishes like tzatziki. And the cucumber is key, since it adds moisture and a subtle cooling element to the sauce.

You may replace the Greek yogurt with (all or part) sour cream or crème fraîche to enhance the fat ratio and lower the carbohydrate content of the tzatziki. To make a dairy-free tzatziki, replace the yogurt with mayonnaise.
If you don’t have fresh garlic, use garlic powder or minced garlic from a container. Experiment to discover what you like most.
