On a low-carb diet, it’s very difficult to have a full meal without bread. However, there are great low-carb foods other than bread that are often overlooked. This tzatziki is a great substitute for croutons in salads and a low-carb alternative for a meal or a snack.

Tzatziki is a traditional Greek sauce made with yogurt and cucumber. It has many varieties, containing different vegetables and herbs. Tzatziki is generally served as a dip with pita bread, and it is a must-have appetizer at Greek restaurants, which means it is basically everywhere. In this recipe, instead of cucumber, Greek yogurt is substituted with cauliflower, which offers more nutrients and is low carb.

I’ve never been a big fan of the traditional white tzatziki sauce, which is usually made from yogurt, cucumbers and mint. Too many people are intimidated by yogurt, which is a shame, since it’s the perfect ingredient to use when making Greek dishes like tzatziki. And the cucumber is key, since it adds moisture and a subtle cooling element to the sauce.

Instructions

  1. Rinse the cucumber and carefully slice it. You may also use the coarse side of a grater to grate it. The skin of the cucumber adds color and texture to the sauce, so don’t peel it.

  2. Place cucumber in a colander and season with salt. Allow 5–10 minutes for the liquid to drain after mixing well. Wrap a tea towel around the cucumber and squeeze off any extra juice.

  3. Place the garlic in a basin after pressing or finely chopping it. Combine cucumber, oil, and fresh mint in a bowl (optional).

  4. Toss in the yogurt and season to taste with black pepper and salt.

  5. Refrigerate the sauce for at least 10 minutes to allow the flavors to blend. It will stay in the fridge for approximately 3 days.

Tip!

You may replace the Greek yogurt with (all or part) sour cream or crème fraîche to enhance the fat ratio and lower the carbohydrate content of the tzatziki. To make a dairy-free tzatziki, replace the yogurt with mayonnaise.

If you don’t have fresh garlic, use garlic powder or minced garlic from a container. Experiment to discover what you like most.
