Cilantro is up front and center in Green Belly, as it should be in any excellent Guatemalan hot sauce. The components are: cilantro (obviously! ), organic apple cider vinegar, water, habanero peppers, extra virgin olive oil, garlic, sea salt, and xanthan gum, in that order.

The parent business, Green Belly Foods, refers to its name-brand hot sauce as a “herbaceous sauce,” and I agree. The fresh herby cilantro flavor comes through first, with notes of garlic and a little sweet tang from the apple cider vinegar. It’s not at all a vinegar-forward sauce. The vinegar adds sweetness as well as sharpness to the sauce, although none of these flavors is overwhelming. In the bottle, both are supporting characters, not stars.

Although there is such a thing as too much cilantro, Green Belly Hot Sauce does an excellent job of balancing out the taste. It’s just enough cilantro flavor to be delicious without being overpowering.

The sweetness is enhanced by the habanero chiles, and the heat comes on fast after the first herby and sweet tastes.

Also, the use of olive oil was a nice touch. It imparts a silkiness to the sauce, giving it a silky, smooth texture that is very pleasing to the palate.

Green Belly Hot Sauce contains 50 milligrams of sodium per teaspoon serving. Although the salt content is minimal, keep in mind that this is the kind of green sauce you’ll use a lot of in one sitting.

Temperature Harmony

Habaneros are the chili pepper of choice here, and fresh habaneros have a Scoville heat rating of 100,000 to 350,000. Green Belly Hot Sauce, on the other hand, dilutes them considerably. They don’t specify the Scoville heat level of the sauce, but it’s in the upper-mild to medium range for me.

The heat builds and lasts a few minutes, so after about three teaspoons, I got what I considered to be a nice medium heat experience. Some people may find that excessively hot, but it all depends on how much you use. In terms of spiciness, a single teaspoon isn’t going to change your life. But what about six? Yes, you will feel it to some extent. It’s deceptive in that sense.

Overall, this is a perfect heat level for real hot sauce connoisseurs. It’s spicy enough to let you feel it, but not so intense that the other components get lost in the mix. Green Belly is all about the fresh, crisp cilantro taste, so it’s a good thing the heat isn’t the main attraction.


Green Belly Hot Sauce, like other Guatemalan green sauces, is very versatile. This sauce should be used wherever that a herb-forward taste is desired.

It particularly shines with cheese-heavy Guatemalan, Mexican (and Tex-Mex), and other Central/South American dishes. Consider tacos, burritos, quesadillas, and enchiladas, which are all popular Mexican dishes in the United States.

It’s also great on eggs, and I’m sure it’d be fantastic on basic grilled meats like chicken or steak. It has the ability to transform a simple meal into a larger, more adventurous dining experience.

One thing to keep in mind: every time you use the bottle, give it a good shake. The olive oil, in my experience, tends to collect at the top of the bottle, drowning out the heat and overall taste on the first bite.


Green Belly Foods is a tiny family-owned company that produces small quantities of spicy sauces. As a result, this isn’t a spicy sauce you’ll usually find in a shop.

The traditional, earthy label, which emphasizes the green cilantro and green habs combined, reminds you precisely what you’re in for, is one of my favorites.

Overall, it’s a very collectable sauce that’s incredibly delicious, difficult to come by, and attractive in a collection. Furthermore, cilantro-forward hot sauces aren’t prevalent among most green hot sauces. This is a traditional Guatemalan green sauce dish that will wow you.
