Bacon Tater Tots are the perfect party or festival dish, especially if you pair them with a beer. They are sprinkled with spicy herbs and then glazed with Sriracha honey.
The only thing you don’t like about these brownies with bacon is how quickly they fly off the plate. Of course, we all know that bacon makes everything better, and that certainly applies to these delicious appetizers.
They’re firmer than most snacks, and you won’t want to eat more than a handful of them, but trust me, they’ll keep everyone happy.
This recipe assumes you are using store-bought toast. The potatoes come in different sizes. You may need to adjust the cooking time if yours is larger or smaller than the average potato size.
They use half a piece of bacon to wrap each tater toots in. I found it easier to cut them in half lengthwise and use the longer bacon strips to wrap them. If you cut them off horizontally, they will be shorter and not curl or drag.
How to make a Tetra Bacon Tater
Preheat the oven to 400 degrees Fahrenheit (200C). Line the baking sheet with parchment paper and place a wire rack over the sheet (optional).
Mix all the spices in a bowl. Sprinkle it evenly over the tater tots and turn it over so that each piece is covered.
Cut the bacon strips in half lengthwise. Wrap a strip around each tote bag. You don’t need to secure the bacon with a toothpick, but it does ensure the bacon stays in place and also provides a convenient way to pick it up and eat it.
Next, make the glaze. This sauce is easy to make and consists only of Sriracha and honey. No additives are required. These two ingredients together are magical. Just mix them in a small bowl.
Put the spritzes in the bowl and drizzle them with the glaze. Tap to coat each piece with frosting.
Place the Tater Tots on the lined baking sheet. I use parchment paper, but you can also use a silicone mat to make sure nothing sticks to the sheet.
Bake 20-25 minutes, until bacon is brown and toast is crisp. Serve with plenty of spicy glaze for dipping.

It’s always important to combine the right appetizers, and these appetizers are quite simple. We serve these pies with a good dry pilsner. It is hopped so that the bitter taste of the hops cuts through the fat of the bacon and complements the salty taste. Other beers that go well with bacon-wrapped tater tots are Pale Ales and IPAs. Some IPAs are too bitter to go well with them, so choose a beer with a low IBU, up to 60 if possible.
