Since 2011, I have been a devotee of Tony and Becky Poirier’s hand-crafted Louisiana-style hot sauce. I am a firm believer in the saying that you can’t go wrong with one of their sauces sold by the bottle, and I have never found a reason to disagree with that statement.

No matter how you feel about the hot sauce world, you have probably heard of Frank’s RedHot. Many of us have tried it—even though we might not admit it. The popular hot sauce has been used to add a kick to everything from eggs to salad dressing, and even as an ingredient for cooking.

Poirier’s Louisiana-Style Hot Sauce certainly has a solid pedigree. It’s a sauce made in collaboration between Louisiana MMA fighter Dustin Poirier and Heartbeat Hot Sauce. And extra-spicy red habaneros are used, a typical ingredient in Louisiana-style hot sauces, as well as cayenne pepper. But how sexy is Poirier really? Is she out of her league? Aroma

Like its Louisiana-style competitors, Poirier’s relies on spicy flavors in its ingredient list. But there are also some surprises. The ingredients are vinegar, aged cayenne pepper, sea salt, red habanero, celery, garlic and canola oil.

The biggest surprise is the habanero red, but we’ll talk about the spiciness later. Another special feature is the addition of celery and garlic to the flavor profile that can be felt at the back of the taste.

But it all starts with a thunderous crackle at the top. Poirier’s stays true to its roots: It’s a spicy, vinegary sauce that originated in Louisiana, but quickly took on other flavors. The red habanero gives you more sweetness. And the background aroma has notes of garlic and celery.

This depth of flavor is a key differentiator for Poirier. It’s not just a hot sauce to get the heat. Poirier’s right. He has something to say.

For sodium: Poirier’s Louisiana-Style Hot Sauce contains 150 mg per teaspoon (7% of daily requirement). So this is a premium sauce, and you will find yourself preferring this hot sauce over others. Be careful. For comparison, the original red Tabasco sauce contains 35 mg per serving.

Heat balance

If red habaneros (especially) and cayenne pepper are on the ingredient list, you can expect Poirier’s Louisiana-style hot sauce to hit hard. Indeed, habaneros have considerable clout (100,000 to 350,000 Scoville Heat Units), and Caribbean red habaneros are often even stronger (100,000 to 445,000 SHU).

But really, the heat is more of a jolt than a roundhouse. It stings a little, but it doesn’t knock you out. The pungency changes from mild to moderate as it develops over several bites. Poirier’s doesn’t give a Scoville heat index, but we think it’s between 2,000 and 3,000 Scoville heat units. It is equivalent to the original red Tabasco sauce (2,500 to 5,000 SHU) and is sometimes milder.

The novice lover of hot sauce can handle this spiciness, as it leaves only a pleasant tingle on the tongue. It doesn’t stick to the throat.

This may seem disappointing to some, given Dustin Poirier’s (aka El Diamanté) MMA pedigree and the addition of extra spicy hubs, but in terms of spiciness and flavor balance, it works well. If this sauce were any more spicy, it would lose the unique depth it gets from the celery and garlic at the end of cooking.

Utility

Like most other Louisiana hot sauces, Poirier is incredibly versatile. Everywhere you put a Tabasco Dome, you’ll find Pear Tree’s, chicken wings and eggs to nachos and tacos. It goes very well with buffalo wings because of the celery in the ingredients. So if you only want to try one thing, start with that.

Poirier’s Louisiana-style hot sauce is also a bit thicker than some of its competitors. Don’t get me wrong, it’s still a thin vinegar flavored sauce, but just a little thicker. This extra thickness allows the sauce to float on the food instead of sinking into it. You can control the placement of the hot sauce on the dish more precisely.

Another great advantage for ease of use is the use of a squeeze bottle instead of a dispenser bottle. This completely changes the game in terms of usability. You can use as much or as little as you want without having to shake the bottle until your hand hurts. So if you want lots of Louisiana hot sauce with your meal, the squeezable bottle style is a 100% win.

Community

If you are looking for a Louisiana-style hot sauce that is not like the typical grocery store options, Poirier’s is a great unconventional hot sauce for your collection. From the addition of the red habanero to El Diamante itself, Dustin Poirier (who also happens to be from Louisiana) has a lot to say here.

The term also refers to his nickname. El diamanté means diamond in Spanish, but what is that shiny sparkle in the middle? White diamond on black dramatic background with red-orange flame. His style is bold, with a cool and modern vibe.
