Cauliflower rice is an easy way to add a vegetable to your diet, and it’s also a great alternative for those who are trying to eat a low carb diet or for anyone who needs a side dish to go with their favorite meal. It is a great way to get more cauliflower in your diet without having to add it to your main dish.

Three methods to cook frozen cauliflower and rice meals in one pot

1. Cauliflower pesto chicken rice :

  • 2 teaspoons extra virgin olive oil
  • cauliflower rice, frozen, 8 ounce bag
  • 4 tablespoons pesto sauce (prepared)
  • grilled chicken, 3 oz., sliced into slices
  • 1/4 cup tomatoes, chopped
  • Fresh parsley and grated parmesan cheese are optional garnishes.

Cauliflower pesto chicken rice :

  • 2 teaspoons extra virgin olive oil, heated in a pan over medium-high heat Cook, stirring occasionally, until the rice and cauliflower are cooked, approximately 4-5 minutes.
  • Stir in the pesto, chicken, and tomatoes for another minute, or until everything is completely warmed. Serve garnished with fresh parsley and Parmesan cheese as desired.

Rice Alfredo with Cauliflower and Mushrooms:

  • 2 teaspoons olive oil, heated in a pan over medium-high heat Cook for a few minutes, until the onions and mushrooms are tender. Remove them from the equation.
  • Add 2 additional tablespoons of olive oil to the pan, along with the rice and cauliflower. Bake for 4-5 minutes, or until well done.
  • Reduce the heat to a low setting. Combine the alfredo sauce, green beans, sautéed onions, and mushrooms in a large mixing bowl. Season with salt and pepper to taste, then top with parsley and Parmesan cheese, if desired (optional).

  • Reduce the heat to low, then add the meat, salsa, cheese, and cilantro.

Additional garnishes include spicy sauce, sour cream, fresh cilantro, and avocado.
