Pour the hot milk into the bowl, add the dry yeast (1) and mix well.
Add the granulated sugar (2) and mix with a hand mixer.
Add the eggs (3) and mix again.
Melt the butter in the microwave and put it in the blender (4).
In a bowl, mix the Type 00 flour and Manitoba flour and grate the lemon rind; add a pinch of salt and the vanilla sachet. Pour the powders together (5) and knead with a planetary hook until the mixture is smooth and homogeneous.
Form into a ball (6), place in a greased bowl and let rise in the oven with the lights on for about 1 hour.

Form balls of dough by hand and prick them in the middle into doughnuts (8); turn them over slightly on a floured work surface. Place the donuts one by one on a baking sheet and let them rise for at least another hour.
Heat a generous amount of peanut oil in a frying pan, dip the fritters in one at a time (9) and fry them on both sides.
Drain and dry the doughnuts on absorbent paper when golden brown and blackened. Finally, dip the fritters in granulated sugar (10).
Place the fried donuts on a platter and serve warm (11).
