Keto Pumpkin Sausage Soup
This delicious keto soup utilizes just enough pumpkin to provide a thick broth that pairs well with the sausage. The spices are what make this soup so tasty! This dish, like most soups, tastes even better the next day, so don’t be afraid to consume the leftovers.
- Sauté the sausage, onion, and bell pepper in a large pan over medium-high heat.
- Stir in the spices when the pork is completely cooked and the onions and peppers have browned (approximately 10-15 minutes).
- Combine the pumpkin, stock, and cream in a mixing bowl. Simmer for 15-20 minutes, or until the soup has thickened, over low heat with the lid open.
- Add the butter, stir to combine, and serve immediately.
There are no dairy items allowed.
If you wish to make this soup dairy-free, replace the double cream with coconut cream and leave off the butter.
You may also add a cup of chopped mushrooms to the soup along with the sausage, onions, and peppers to make it more substantial.
Also, make sure the sausages and veggies are thoroughly roasted. If they brown a lot, the cooked soup will have a distinct taste.
If you don’t like pork, you may substitute the same quantity of shredded chicken thighs for the minced pork.
Some people like to drain the fat from the sausages, which I don’t do. Whether or not to drain the fat is frequently a matter of personal taste and the quantity of fat that develops on the sausage.
