When I make pasta, I always make the most of my family’s vegetable garden. The main theme of my garden is to raise as many varieties of vegetables as possible, but I also have a few herbs that I like to plant in between. The herb I grow the most is rosemary, which I get from a friend who used to own a restaurant. I love the scent of rosemary, especially when the plants are blooming.

It’s difficult to find traditional vegetarian recipes that use zucchini noodles  in place of pasta, but this recipe is one of the exceptions. It’s a low-carb recipe, and rather than relying on heavy sauces, it uses a simple cheese bolognese to fill in for the meat.

Low-carb Bolognese Zoodles



Oh, yes, yes, yes, yes, yes, yes, yes, yes, yes, yes, yes, yes, yes Tonight’s supper may be a hearty and delicious low-carb Bolognese! You want this with a touch of garlic and a dash of umami.

  1. Finely chop the veggies. Sauté until softened in butter or olive oil, then add the ground meat. On high heat, sauté until everything has a beautiful color. Stir in the other ingredients and cook for 15 minutes on medium-high heat.

  2. Reduce the heat even further. If the sauce becomes too thick, add more water. Allow for at least 20 minutes of simmering time. The greater the taste, the longer the sauce is left to boil.

  3. Make the noodles in the meanwhile. To create long, thin strips of zucchini, use a spiralizer, mandolin, or peeler.

  4. Toss them around rapidly in butter or olive oil in a frying pan. It just takes a minute to prevent them from becoming overly soft.

  5. If necessary, season the sauce with additional salt and pepper.

  6. Warm the noodles and serve with a dollop of spicy sauce on top. Add a generous grating of Parmesan cheese to finish.

Make a double batch and freeze individual servings to use in other recipes such as pies, lasagna, and gratins.

For a delicious Tex-Mex alternative, skip the oregano and celery and instead use taco seasonings.

If you want to cut carbohydrates even further, leave off the tomato paste.
