Onion rings with a low carb count
These low-carb onion rings are crispy on the surface and wonderfully soft on the inside, thanks to a unique mix of coconut flour, Parmesan cheese, and garlic powder that creates a subtle but unexpectedly complimentary marriage of flavors. Just keep in mind that they should be cooked in oil on a low-to-moderate heat to avoid burning.
In a large saucepan, melt the coconut oil over low heat.
While the oil heats up, mix together the eggs and 1/3 oz. coconut flour (approximately 1.5 tbl) and a sprinkle of salt Whisk until all of the ingredients are well combined.
In a separate medium-sized mixing bowl, combine the remaining dry ingredients.
Coat each onion ring thoroughly in the beaten egg with a fork, then lift and drop the covered onion ring into the flour mixture. Spoon the flour mixture over the whole ring and place it on a platter carefully.
Fill the pan with rings, allowing room between each one. Fry until golden brown on both sides, approximately 3-4 minutes each side, and then transfer to a dish lined with paper towels to cool. Continue until the process is complete, then season to taste.
