How to prepare squid and shrimps au gratin

Clean the shrimp by removing the head, the shell and the dark part of the intestine.

Peel the squids and cut them into slices about 1.5 cm thick.

In a bowl, mix the breadcrumbs with the chopped pistachios, grated Parmesan cheese and chopped parsley; add the shrimps and squid to the mixture and cook well.

Arrange the squid and breaded shrimps in a pan lined with baking paper and sprinkle with lemon peel and sliced julienne. Sprinkle the remaining chopped pistachios and season with oil and a pinch of salt and pepper. Bake in the oven at 180 degrees and cook for 20 minutes.

If the surface is golden brown, remove the squid and shrimps au gratin from the oven and serve immediately.
