You can easily make this vegetable pulao recipe in an instant pot or pressure cooker. It tastes best with a tomato curry or you can enjoy it as a perfect weeknight meal with yogurt, cucumber and papad.

I don’t know about you, but I always make a variation on veggie pulao when I can’t choose or don’t feel like cooking a complicated dish. Since I got the Instant Pot, it’s easier than ever to prepare these favorite family dishes in one pan.

This delicious pulao vegetable is one of those dishes in a pan. It is one of the most popular rice dishes and there are many variations of this simple and easy Indian dinner recipe.

Speaking of variations, there are many types of pulao and many names, vegetable pulao, vegetarian pulao or Indian pulao. You can also use different vegetables depending on the season to prepare it. You can also use the same pulao recipe and cook this pulao vegetable mixture in a pressure cooker.

This is a nutritious vegetable rice recipe, quick and easy to make in 20 minutes. To prepare the pulao, all you need is a few vegetables and good quality aromatic basmati rice.

Difference between pulao and pilaf

In Middle Eastern cuisine, there are almost as many rice dishes as pilaf dishes. The only difference is that the pilaf is cooked in broth instead of water and no chilli is used.

Veg pulao is also prepared with basmati rice and a gluten-free vegetable mix. If you substitute ghee or clarified butter, the recipe becomes completely vegetarian.

Vegetable ingredients Pulao

If you have a piece or two of carrot, potato, zucchini or a similar vegetable in your fridge, pulao is one of the best rice recipes you can make. But traditionally, the ingredients of the vegetable pulao recipe follow.

Fig: Basmati rice is best for pulao. I usually use long grain basmati. But if you don’t have basmati rice, you can use any type of rice that is not sticky. Adjust the amount of water in this recipe depending on the type of rice you are using.

Vegetables: You can use a variety of mixed vegetables, such as onions, ginger and green peppers, green peas, chopped green beans, diced potatoes, carrots, and so on.

Spices and condiments : Salt, cumin/jira seed, bay leaf, cloves, cinnamon, star anise, red chilli powder, garam masala powder to taste.

How to prepare an instant pot of vegetables pulao

  1. How to make a pulao of vegetables in an instant pot.
  2. First, wash and rinse the basmati rice in water until the water runs clear and set aside. Put the Instant Pot in JUMP mode. Add the ghee and let it melt.
  3. Once the inner POT is hot, add all the spices. Cook while stirring for a few seconds. Add sliced onions, ginger paste and green chillies and saute until onions are light brown.
  4. Now add the potatoes, green peas, carrots, beans, washed and soaked basmati rice and saute for 2 to 3 minutes. Then add the chili powder, garam masala, water and salt and mix well.
  5. Close the lid and move the air mode valve to the closed position. Press the CANCEL button on the Instant Pot. Put the pot in PRESSURE COOK mode, switch to medium pressure and set the timer for 4 minutes.
  6. Make a quick release with a long spoon, move it from the closing position to the venting position. Once the pressure is off, open the lid and gently loosen the rice.
  7. Serve this spicy and delicious vegetable pulao warm with raita/yoghurt and cucumber.

  • You can substitute vegetables according to availability. I used the most common vegetables like carrots, peas, green beans, cauliflower, etc.
  • I used the pressure cooker setting on the Instant Pot. If you want, you can use the preset settings to cook the rice in the instant pot.
  • Instead of white basmati rice, brown basmati rice can also be used for pulao. Adjust the amount of water to the type of rice you are using.

Instructions

  • Press the JUMP mode on the temporary potentiometer. Add the ghee and let it melt.
  • Once the inner POT is a hot spot in all spices. Cook for a few seconds.
  • Add chopped onion and ginger paste and saute until onion is light brown.
  • Now add the potatoes, green peas, carrots, beans, washed and soaked basmati rice and stir-fry for 2 to 3 minutes.
  • Add the chili powder, garam masala, water and salt and mix well.
  • Close the cover and put the air valve in the closed position.
  • Press the CANCEL button on the potentiometer.
  • Set the pot to PRESSURE COOK mode, turn on medium pressure and set the timer for 5 minutes.
  • Make a quick lock with the long spoon, move it from the closed position to the vent position.
  • After the pressure is released, open the lid and carefully remove the fig.
  • Serve this spicy and delicious vegetable pulao with raita/yogurt and cucumber.
