There are many different approaches to low-carbohydrate eating. Some people only focus on protein and fat, others on starch, while others try to find the perfect balance. The pork scallopini, which I make, is a dish that I’ve found works for me.

Pork Scallopini is a dish that is defined by its simplicity and elegance. It is quick and easy to prepare and is usually served in a bowl with a little salad on the side. In this recipe, I have used pork tenderloin, but you can use any cut of pork fillet.

One of the things I love about the low-carb and ketogenic diet is the ability to be creative when cooking. I’m always on the look out for new things to try, and they’re usually pretty easy to make. I was inspired to make pork scallopini after seeing a video of a giant portion of pork scallopini being consumed by a man at a wedding reception.

This pork scallopini is simple to make but looks and tastes like it took hours in the kitchen. All of the tastes of a high-end restaurant meal, right in the comfort of your own home. This meal is ideal for hectic weeknights or more relaxed weekends spent entertaining friends and creating memories over food.

Instructions

  1. Season the pork chops on both sides liberally with salt and pepper.

  2. In a large saute pan over medium-high heat, warm the olive. Cook the pork in the pan until both sides are browned and cooked through, approximately 2 minutes each side. Remove from the pan and keep heated by covering.

  3. Reduce the heat to medium and add the butter and capers to the same pan. Cook until the capers are sizzling and spicy.

  4. Scrape up and stir in any pieces stuck to the bottom of the pan with a rubber spatula before adding the chicken broth and lemon juice.

  5. Bring the mixture to a boil over medium-high heat. Boil until the sauce has reduced to approximately half its original volume.

  6. Reduce the heat to medium and toss in the tomatoes. Cook for 3 minutes, or until tender and slightly blistered.

  7. Serve the pork with the sauce on the side. Serve with fresh parsley as a garnish.
