This quick and easy meal has all of the flavors of a traditional Mexican salad but none of the tortillas or carbohydrates. Make a big quantity of the beef foundation and keep it in the fridge for leftovers throughout the week. Simply top with fresh salad ingredients and guacamole for a complete dinner. Instructions

  1. In a large pan, heat the olive oil over medium-high heat. Add the ground beef and mash it up with a spatula. For approximately 10 minutes, or until cooked through, stir periodically.

  2. Stir in the taco spice until it is evenly distributed throughout the meat. Bring the mixture to a boil by adding the water and increasing the heating to high. Reduce the heat to medium-low and continue to cook for another 3-5 minutes, or until the mixture thickens. Cover and keep warm in a low-heat setting. Prepare the guacamole in the meanwhile.

 

This carb-free taco salad is a tasty weeknight meal that’s great for salads, lunch, or dinner. The main ingredients are ground beef, which can be replaced with turkey or chicken, cheese, and a hard-boiled egg. You can also use low carb tortillas instead of corn tortillas.
