First, heat 2 liters of organic whole milk in a large bowl on the stove over medium-low heat. You want the milk to boil barley, with a few bubbles on the surface, but not boiling. Boiling can cause the milk to separate.

While the milk is heating, stir frequently with a clean wooden spoon. This will prevent the milk from burning on the bottom of the pan.

While the milk is cooking, set the plate on the counter. Place a clean glass container in the center of the dishwasher. When the milk is hot, pour it into the prepared glass container. Allow the mixture to cool on the countertop.

When the milk has cooled enough to be comfortably touched (too hot kills the good bacteria you are about to add), dispense 3 tablespoons of room temperature organic whole yogurt. Simplicity is best. Put a few teaspoons of the milk mixture in a bowl with the yogurt and stir to combine.

Pour the softened yogurt into the milk container. You have just added your live and active cultures! Stir well to distribute the yogurt evenly.

Put clean dishes on the container.

Secure the cloth in the container with the lid.

Wrap a second tea towel around the sides and over the glass bowl. This will prevent light from entering the milk and yogurt.

Place the entire bag in the fridge overnight and wake up to a bowl of creamy, delicious homemade yogurt with your favorite toppings!

What is the shelf life of homemade yogurt?

Store homemade yogurt in the refrigerator for up to a week. An airtight container is best for freshness. Yogurt does not freeze well.

The biggest difference between plain yogurt and Greek yogurt is the water content. A lot of moisture flows out of Greek yogurt. This makes the yogurt thicker, denser, creamier and contains more protein than regular yogurt.

Plain yogurt is softer, fluffier and softer. You can turn plain yogurt into Greek yogurt overnight by putting the homemade yogurt in a strainer over a bowl. Leave it in the refrigerator overnight, and in the morning you’ll have a dense and delicious Greek yogurt!
