End of summer is upon us, and that means a lot of great soup recipes to make with all those beautiful fresh vegetables. This one is a bit different, and uses a combination of spinach and artichoke that is both healthy and tasty. It is also easy, which is a bonus.


Soup with spinach and artichokes that is low in carbs



A famous dip made with spinach and artichokes in a cream sauce, but did you know they also make a delicious low-carb soup? Better still, the frozen spinach, canned artichokes, cream cheese, and chicken broth components can all be kept on hand in the freezer and pantry for a fast lunch or dinner without having to go to the shop. The end product is a creamy, rich soup with a typical spinach and artichoke taste.




  1. To defrost the spinach, remove it from the freezer and place it in a colander in the sink. Wait until you’re ready to utilize it before draining it.

  2. In a heavy saucepan over medium-high heat, heat the olive oil, then add the onion and garlic, sautéing until transparent and aromatic.

  3. Reduce the heat to medium-low and whisk constantly until the cream cheese has melted.

  4. Squeeze the spinach to remove any extra moisture before adding it to the saucepan. One cup at a time, add the chicken stock, stirring thoroughly after each addition. Finally, mix in the chopped artichoke hearts completely.

  5. Return to a high heat setting until barely boiling, then lower to a low heat setting and cook for 10 minutes. Season with salt and pepper to taste.

  6. Parmesan flakes, a bit of salt, black pepper, and chopped parsley are sprinkled on top.
