Chocolate mint ice cream is very popular all over the world. It is sold in a package in the supermarket or in a ball on a piece. Recipe for mint ice cream with chocolate chips

  • 1/2 cup of sugar
  • 6 egg yolks
  • 1 1/4 cup fat
  • 1 glass of whole milk
  • kosher salt
  • 1 1/2 glass of fresh mint, coarsely chopped
  • 3.5 ounces of dark chocolate


  1. Beat the egg yolks and the sugar in the middle bowl until they are light in colour. Never mind.
  2. Heat the cream and milk in a pan over medium heat on a heavy base until they boil. Take the pot off the fire. Take the bucket with the liquid and pour it slowly into the yolk, sighing as fast as you can until you are united.
  3. Pour the egg yolk slowly into the milk pot and whistle quickly. After mixing, return to medium heat and continue cooking until the liquid thickens and the back of the spoon is covered. It usually takes 3 to 5 minutes before thickening occurs. Never let the mixture boil.
  4. As soon as the base of the ice cream has thickened, add a pinch of salt and ground mint and pour it into an airtight container. Leave the bench to cool for 5 minutes, then place the lid on the tray and let it cool overnight.
  5. Pour the cooled custard through a sieve and remove the solids. Pour the remaining liquid into the ice machine and stir until the ice begins to solidify. At the end of the shaking process, melt the chocolate in the microwave or in a water bath. Let it cool down before slowly pouring it into the ice.
  6. When the ice is ready, place it in an airtight container and freeze for 2 to 3 hours until the ice is firm.

How to make this recipe without ice cream

You can still make this recipe without nice equipment. Follow the instructions until it is time to use the machine to make ice. At this point, the ice cream is poured into an airtight container, the chocolate is poured and gently stirred and then placed in the freezer. Take the tray out of the freezer every 20 minutes and stir until the ice cream has a smooth texture. Repeat this step a few more times until it is too thick to mix.

4 tips for better mint ice cream

1. Selection of premium chocolate

Try to find chocolate where not many ingredients have been added. Conventional chocolate bars contain additional additives that do not contribute to making a good ice cream.

2. Colour enhancement

The use of fresh mint will lead to the appearance of light-coloured ice. If you prefer a lighter green, use a few drops of dye.

3. Using petrol

To give the ice cream a more intense mint flavour, add a teaspoon of mint extract.

4. Use chocolate chips

Chocolate can be a problem. Too high a temperature or an accidental splash of a few drops of water can spoil your chocolate. If you prefer the simplest option, add chocolate chips.

Why not add egg yolk at the start of cooking?

By adding a little warm milk to the yolks, you can gradually warm them up. This technique is called hardening and is necessary for the foundation of England. If you add the egg yolk at the beginning of the cooking process, it will heat up too quickly and start boiling. Scrambled eggs in ice is not the best combination.

What does it mean when it covers the back of the spoon?

When you heat up the pudding, you know it’s ready by doing a quick test. Dip in a wooden spoon and remove it. If you can stick your finger in the pudding and the snake stays, it’s done.

What’s wrong with cooking ice cream?
