Don’t put it off till Thanksgiving. The next time you roast a chicken, try this wonderful low-carb stuffing. Celery, onion, and poultry spice all strike all of the perfect notes. Yes, stuffing may be enjoyed without feeling filled!

Instructions

  1. Preheat the oven to 350 degrees Fahrenheit (175 degrees Celsius).

  2. Sift the dry ingredients into a medium-sized mixing basin.

  3. Slowly pour the wet components into the dry ingredients, stirring constantly until everything is well combined.

  4. Fill a small bread pan approximately a third of the way with batter.

  5. Cook for 40-50 minutes, or until a toothpick inserted in the center comes out clean. Allow for cooling before breaking cornmeal for stuffing. It’s easy to make ahead of time and even freeze.

Tip!

3 of the 6 eggs may be replaced with 1/3 cup coconut milk for a thicker, less eggy cornbread. Yowsa! Who’d have guessed that stuffing could be low-carb?
