Instructions

  1. Preheat the grill on low heat for 20-30 minutes with the lid covered.
  2. In a mixing basin, combine the dry ingredients for the tortilla dough. Mix thoroughly.
  3. Pour in half of the boiling water and the olive oil. Mix well with a spoon. After a few minutes of stirring, check the consistency. Add a bit extra coconut flour if the dough is too sticky. Add water if the dough isn’t sticky enough. With your hands, form a pizza ball that is not sticky.
  4. Between two sheets of baking paper, smooth each dough ball with a rolling pin. The thickness of the pizza should be at least 1/2 inch (1 cm).
  5. Use a paper towel to prevent the pizzas from adhering to the grill after brushing it with olive oil.
  6. Brush each pizza with olive oil, ensuring sure it is well covered. Turn the pizza over in your hand and gently put it greased side down on the grill. Carry on with the second pizza in the same manner. Cook for 5 minutes on each side with the lid closed, ensuring sure they are cooked through and not burnt.
  7. Brush the top of the pizza with the egg wash and flip it over to brown the other side for a few minutes.
  8. Remove the pizzas from the griddle and cover them with mozzarella cheese, chopped tomatoes, and fresh basil.
  9. Place the pizzas back on the grill and shut the lid for another 5-7 minutes.
  10. Season with salt and pepper after removing from the pan. Drizzle with extra virgin olive oil.

In the absence of grilling preparation

Preheat the oven to 175 degrees Celsius.

Place the pizza dough on a baking sheet coated with baking paper after step 4 is completed. Without filling, bake for 25 minutes.

Remove from the oven, top with the filling, and bake for another 10 minutes, or until the cheese is melted and the sides are beautifully browned.
