This low-carb side becomes better with each buttery, nutty mouthful. Allow the silky, smooth texture to entice your taste senses. It’s very simple to make. It goes well with almost any main dish. In three words, the best. Never, ever mash.

Instructions

  1. Preheat the oven to 400 degrees Fahrenheit (200 degrees Celsius). Cauliflower should be trimmed and divided into smaller florets. In a large baking dish, combine all of the ingredients.

  2. Cover the florets with finely sliced butter. Preheat the oven to 350°F and bake for 30 minutes.

  3. Butter the florets and turn them over. Roast for another 15 minutes, or until the cauliflower is golden brown.

  4. Remove from the heat and pour into a pan. Allow for 15 minutes of boiling time, or until the cauliflower is tender.

  5. Using an immersion blender, mix everything together. To taste, season with salt and pepper.

  6. Serve with fish, pork, or poultry as a side dish.
