These Mexican-style eggs will liven up your morning. Fried eggs, a spicy tomato salsa with jalapeos and cheddar, and avocado make Clara’s version low carb and filling. It’s the most delectable way to start your day!

Instructions

  1. In a saucepan over medium heat, heat one-third of the oil. Cook until the jalapeos are somewhat cooked, then add them. Then add the onion and garlic and cook, stirring constantly, until the onions are transparent.
  2. Reduce the heat and add the tomatoes. Cook, covered, until the tomato is soft and the mixture has thickened into a sauce.
  3. Remove from the fire and season with salt and pepper to taste before setting aside.
  4. In a frying pan, heat the remaining oil over medium heat. Fry the eggs one at a time until the white has set and the yolk is runny and crunchy.
  5. Add a pinch of salt and pepper to the eggs.
  6. Serve the eggs with the queso fresco and cilantro on top of the tomato sauce. Serve with a side of avocado.
