In this creamy, easy-to-make keto chicken meal, Mediterranean superstars feta cheese, olives, and pesto come together. Try it with low-carb, store-bought pesto or your own homemade pesto. Your taste senses — as well as your family — will be grateful!

Instructions

  1. Preheat the oven to 400 degrees Fahrenheit (200 degrees Celsius).

  2. Chicken should be cut into bite-sized pieces. Salt & pepper to taste.

  3. In a large pan, melt the butter or oil and cook the chicken pieces in batches over medium-high heat until golden brown.

  4. Combine pesto and heavy cream in a bowl, either using store-bought low-carb red or green pesto or creating your own.

  5. Combine the fried chicken pieces, olives, feta cheese, and garlic in a baking dish. Combine the pesto and cream in a mixing bowl.

  6. Preheat the oven to 350°F and bake for 20-30 minutes, or until the dish is bubbling and light brown around the edges.
