If you’re not a vegetarian, chicken is probably your main source of protein. In our house we eat chicken at least twice a week, and sometimes we have to close it with a fence! So we’re always trying to find new ways to change the same menu. As you all know, this can be difficult, especially if you, like me, only have white meat. This recipe for chicken with olives and sun-dried tomatoes has really paid off. By roasting the chicken in high quality white wine vinegar, we created a spicy sauce, which we covered with garlic quinoa. Olives and sun-dried tomatoes were an excellent addition. The taste of this dish has really invigorated my palate.

Chicken vinegar with olives and sun-dried tomatoes

  • 3 to 4 pounds ankles and goose bumps on
  • 1 teaspoon turmeric
  • Olive oil 6 tablespoons.

  • 1/2 cup white wine vinegar
  • 2 cups of Castelvetrano Maslins in the stands
  • 1/4 cup sun-dried tomatoes
  • 2 cloves of garlic, minced meat
  • 1 cup chopped parsley
  1. Put the chicken in a large bowl and add 2 tablespoons of olive oil and turmeric for a careful brushing.
  2. A spice with a little salt and pepper to taste.
  3. Place the chicken on the baking tray, remove the side sheet and cover with the vinegar mixture.
  4. Cook the chicken until roasted and roasted for 40 minutes.
  5. While cooking the chicken, mix the olives, garlic, sun-dried tomatoes and parsley with the remaining 4 tablespoons of oil.
  6. When the chicken is cooked, take it out of the oven and place it on a tray.

Why Castelvetrano olives?

This recipe is mainly about olives. If you’ve never eaten a Castelvetrano olive, you really miss a treat. These olives are not like all the others. They have a mild, almost sweet, and if possible also a salty taste profile. On the outside they are hard and crispy, on the inside they have an incredibly greasy texture. These are very good meat olives. The bright green of the Castelvetrano olive will make you eat with your eyes long before the first bite touches your lips. They also have an excellent snack bar. These olives are now standard in my larder, and the sauce made in this recipe for chicken with olives and sun-dried tomatoes can easily be replicated for use with good flakes. If you need another reason to taste these olives, it’s the food they give you. They are an excellent source of vitamin E, which can help reduce inflammation. They are a major source of healthy fats, especially monounsaturated fats, which have been shown to be beneficial for lowering blood pressure and improving the immune system. Castelvetrano olives and olives from Castelvetrano are easily available in most supermarkets or in the Amazon.

None of us needs that much sodium in our diet.
