If you’re not a vegetarian, chicken is probably your main source of protein. In our house we eat chicken at least twice a week, and sometimes we have to close it with a fence! So we’re always trying to find new ways to change the same menu. As you all know, this can be difficult, especially if you, like me, only have white meat. This recipe for chicken with olives and sun-dried tomatoes has really paid off. By roasting the chicken in high quality white wine vinegar, we created a spicy sauce, which we covered with garlic quinoa. Olives and sun-dried tomatoes were an excellent addition. The taste of this dish has really invigorated my palate.
Chicken vinegar with olives and sun-dried tomatoes
- 3 to 4 pounds ankles and goose bumps on
- 1 teaspoon turmeric
- Olive oil 6 tablespoons.

- 1/2 cup white wine vinegar
- 2 cups of Castelvetrano Maslins in the stands
- 1/4 cup sun-dried tomatoes

This recipe is mainly about olives. If you’ve never eaten a Castelvetrano olive, you really miss a treat. These olives are not like all the others. They have a mild, almost sweet, and if possible also a salty taste profile. On the outside they are hard and crispy, on the inside they have an incredibly greasy texture.
