I’ve always loved gingerbread cookies, but I’ve found they can be a bit too fussy and time-consuming for some folks. So, I decided to come up with a keto version of a classic recipe that uses just a few ingredients and takes less than an hour to put together. These cookies are not only keto-friendly, but they’re also gluten-free, grain-free, sugar-free, dairy-free, nut-free and delicious, making them a great snack or holiday treat for the whole family. Swedish gingerbread biscuits on a keto diet



Like few other recipes, the aroma of baking gingerbread will fill your home with Christmas joy. Our keto gingerbread cookies are based on a classic Swedish recipe that we’ve made keto-friendly for you. They’re just as much fun to make as they are to eat. Jul, you are a god!

  1. In a small saucepan, combine the water and spices. Bring the water to a boil. Remove the pan from the heat and stir in the butter. Stir until the chocolate has melted. The cinnamon will give the mixture a slimy texture.

  2. In a separate dish, combine all of the dry ingredients. Combine the spice combination and the egg white in a mixing bowl. Form the dough into a ball after fully mixing it. Cover with plastic wrap and chill overnight to let the flavors to develop.

  3. Preheat the oven to 300 degrees Fahrenheit (150 degrees Celsius).

  4. Cut the dough in half and flatten it with a rolling pin. The simplest method is to sandwich the dough between two sheets of parchment paper. The dough should be approximately 1/8 inch (3 mm) thick when flattened. Cut the gingerbread cookies into shapes using cookie cutters. Carefully transfer them to a baking sheet lined with parchment paper using a spatula.

  5. Bake for 7-9 minutes, or until the cookies are gently browned. Reduce the heat to 200°F (100°C) and bake the cookies for another 30 minutes or until crisp, depending on their size and thickness.

  6. Before serving or decorating the cookies, let them cool fully on a cooling rack.


Serve these gingerbread cookies with a schmear of butter and crumbled blue cheese for a more typical Swedish experience. It may seem like an unusual pairing, but it’s a delectable treat with a refined taste profile for Christmas hors d’oeuvres.
