  1. One of the eggs should be separated into yolk and white. The yolk should be saved for the pastry glaze.

  2. Toss the almond flour, grated mozzarella, butter, and salt with the egg white and the other whole egg. Using a big metal spoon, thoroughly combine the ingredients.

  3. When you have a rough dough, gather it into a ball with your hands. It will be sticky at first, but as it cools, it will harden up. Wrap the ball in parchment paper and flatten it a bit. Refrigerate for 1 hour or freeze for 40 minutes before serving.

  5. Unwrap the cold puff pastry and cut it in half. Place each half of the dough between two sheets of parchment paper and roll out into 12″ x 4.5″ long, thin rectangles (30 x 12 cm) It should be approximately 1/8″ thick (3 mm). Cut out pieces of dough and put them where required to get the rectangle form.

  6. Remove the casings from the sausages and arrange them end-to-end, three sausages per rectangle, along the middle of the dough. Roll and secure the dough around the sausages using parchment paper. Trim any extra dough with a sharp knife. After that, slice each length into eight sausage buns.

  7. Place each sausage roll on the baking sheet that has been prepared. Brush with the yolk of an egg.

  8. Bake for 22 to 25 minutes, or until golden brown and firm when touched. Serve hot with a side of mustard.
