In this keto indian butter chicken recipe, the chicken is marinated and cooked in a spicy and creamy sauce. The sauce is made with butter, garam masala, cumin, and green chilies.  The butter chicken is then served over a bed of cauliflower rice.

Namaste! We must make a confession…. One of our favorite Indian meals is butter chicken, and we know we’re not alone! Thankfully, Jill is here to encourage you to try her keto-friendly version of this delicious butter chicken with fried cauliflower.

Instructions

  1. In a food processor, combine the tomatoes, onion, ginger, garlic, coriander, tomato paste, and spices. Mix everything together until it’s completely smooth. Stir in the cream for a few seconds.
  2. Refrigerate the chicken for at least 20 minutes, ideally longer, after marinating it in the marinade.
  3. In a large pan, melt a third of the butter over medium-high heat. Remove the chicken from the marinade and cook for 5 minutes in butter (save the marinade).
  4. Pour the remaining oil over the chicken and add the marinade. Cook the chicken for 15 minutes over medium heat, or until it is fully done. Season with salt to taste.
  5. Pour over the cream and garnish with fresh coriander.
