Breakfast has never been easier. Make this keto casserole on Sunday and you’ll have breakfast covered for the rest of the week. Easy to make, high in protein, and portable enough to consume on the move. Did we mention the bacon (as well as the mushrooms)?
Preheat the oven to 400 degrees Fahrenheit (200 degrees Celsius).
In a pan, sauté the bacon and mushrooms in butter over medium-high heat until golden brown. To taste, season with salt and pepper.
Fill a greased baking dish halfway with the contents of the pan.
In a medium-sized mixing basin, whisk together the remaining ingredients. Salt & pepper to taste.
Bake for 30-40 minutes, or until golden brown on top and set in the center, pouring the egg mixture over the bacon and mushrooms. If the top of the casserole is on the verge of burning before it’s done, cover it with aluminum foil.
