How to Keep Garlic Chicken Fresh
Garlic chicken may be kept in the fridge for up to 5 days in an airtight container. It may also be frozen for up to four months.
The chicken should be well cleaned and trimmed. With a sharp knife, cut the chicken into medium and big pieces of similar size. 14 teaspoon salt, generously sprinkled over the chicken pieces and rubbed in well. Cover with plastic wrap and set aside.
Slightly smash the garlic cloves.
In a large skillet, heat the olive oil over medium heat. Sear the chicken pieces until they are golden brown. All of the chicken pieces should be flipped and seared on the other side until golden brown.
Place the chicken pieces in a bowl and add the garlic cloves to the same pan where the chicken was cooked. Cook until the garlic is golden brown.
Fill the pan halfway with chicken stock and bring to a boil.
Cover the pan with a lid and add the chicken pieces and white wine. Cook the chicken for 20 minutes over medium heat, tossing occasionally, or until it is fully cooked.
Season the chicken with salt and freshly ground black pepper. Stir in the scallion greens and parsley, then scatter over the skillet. Serve and have fun!
Any vegetable oil may be substituted for olive oil.
Other herbs, such as rosemary or bay leaves, may also be used.
