  • 1 teaspoon masala (powder or paste)

Method

Where’d you get the chicken?

  1. Put the ginger, garlic, masala and yogurt in a bowl and whisk until everything is well mixed.
  2. Stir in chicken until meat is coated. Then cover the bowl and put it in the fridge for at least 1 hour, preferably overnight.

To make the sauce

  1. Put the butter and vegetable oil in a large pan and heat over medium-high heat. Add the onions and sauté for 5 minutes until soft.
  2. Add the ginger and garlic and cook for 30 seconds, stirring constantly. Then stir in the tomatoes, coriander, cumin and chilli and cook for 7 minutes. Add a little water when the sauce starts to bubble.

  1. Heat the oil in a large skillet over medium-high heat and add the chicken. Add the chicken without pouring the rest of the marinade from the container. Bake for 5 minutes until golden brown.
  2. Pour in the sauce and stir. Heat until boiling, then stir in the cream and garam masala.
