It’s thickened with chia seeds and sweetened with whatever your preferred keto sweetener is. I prefer allulose, but I also use stevia and erythritol in this jam. I love how simple this recipe is to prepare, and with just 1 net carbohydrate per serving, anybody can make and enjoy their own jam!
: 8 SERIES KETO JAM WITH VERY SMALL FRUIT :
Time to prepare: 5 MINUTES TIME TO COOK: 5 MINUTES TIME TOTAL: 10 MINUTES This low-carb and keto jam is simple to make and tasty!
- 1 cup fresh berries (I used 1/4 cup each of strawberries, blackberries, raspberries, and blueberries).
- Optional: 1 Esslöffel Chiasamen
- sweetener (equal to 1-2 tablespoons sugar or to taste)
1 In a small saucepan over medium-high heat, combine the berries and sweetener. (I suggest coarsely cutting the strawberries beforehand if you’re using them.) Cook for approximately 5 minutes, stirring periodically, or until the fruit starts to break down. Remove from heat and mash to desired consistency using a potato masher, wooden spoon, or blender .
2 Toss in the chia seeds and toss to combine. Allow 10 minutes for cooling. As the jam cools, the chia seeds thicken it.
3 If required, adjust the sweetness of the jam. Refrigerate for up to three months or freeze for up to a week in an airtight container. (I freeze individual portions in tiny ice cream tubes.)
