70 grams - Smoked bacon

Puréed sweet potato soup is a warm and pleasant appetizer in autumn. These tuber vegetables, also called American potatoes or sugar potatoes, are characterized by a firm and compact flesh and a beautiful orange color, as well as an irresistible taste reminiscent of a mixture of pumpkin and chestnuts. In our recipe, which is very easy and quick to prepare, they are cooked in vegetable stock and then mashed until they are thick and creamy. A final topping of bacon and crispy croutons adds flavour and crispness and balances the compactness of the dish. Perfect comfort food for dinner at home , when you want something that warms and invigorates, but also for elegant and special occasions. So let’s learn how to prepare it by strictly following all the steps.
How to make sweet mashed potato soup
Wash the sweet potatoes well and then peel them with a potato peeler (1).
Cut the sweet potatoes into slices for faster preparation (2).
Put 4 tablespoons of oil in a saucepan and then add the peeled and coarsely chopped onions (3).
Add the sweet potatoes and vegetable stock or boiling water (4), then add salt and simmer until the sweet potatoes are cooked, about 25 minutes.
Once cooked, puree the sweet potatoes with a hand blender until smooth and creamy (5).
Cut the bread into cubes (6).
Place the bread cubes in a non-stick pan, drizzle with oil, season with chopped rosemary and fry until crispy (7). Fry the bacon cubes in another pan without adding more fat.
Divide the puree into an individual bowl and place croutons, crispy bacon and cream cheese on top in a kennel. Finish with some rosemary needles and ground pepper and serve (8).
Storage of sweet mashed potatoes
Sweet mashed potato soup can be kept in the refrigerator in a special hermetically sealed container for 1-2 days . You can also make it in large quantities, divide it into several pots and store it in the freezer, so it is always available.
