How to make khachapuri: step-by-step instructions
In a bowl, combine the flour, baking powder, salt, sugar, water and milk. Mix with your hands until you have a smooth dough.
Cover the bowl and let the dough rest for 15 minutes until it is slightly soft. Then add the sunflower oil and knead again with your hands to a smooth dough. Cover the bowl and let the dough rise for 40 minutes.
Meanwhile, in a second bowl, mix the grated cheese, salt and milk with a spoon.
When the dough is ready, press it out and place it on a floured work surface. Knead a few more times and then divide the dough in half with a sharp knife. Knead each small piece of dough again.
Press the dough into flat circles with your fingertips.
Cover the edges of the dough with the cheese mixture. Then gently fold to form a filled crust around the dough.
Connect the top and bottom pieces to create a tapered appearance.
Fill the center with the remaining cheese and place the field and shaped bread on the baking sheet. Brush the crust with the egg wash and bake for 15 minutes until golden brown.
After 15 minutes, remove the baking sheet from the oven and carefully break an egg into each khachapuri. Bake for another minute.
Remove the bread from the oven and place two pieces of butter on each egg. Let the butter melt and serve.
