  • Fresh baguette

  • Oil

Some traditionalists say you can’t make a real Philly cheese sandwich without a spreadable or whipped cheese, but provolone is a thin, melted cheese that can be used for this sandwich.

What kind of meat should you use?

The key to the best cheesesteak is to use high quality beef, cut very thin. Ribeye is a classic ingredient for traditional real cheesesteak sandwiches. Make sure you cut it with a sharp knife so that the cuts are as precise as possible.

How to make Philly Cheesesteaks

Spread both sides of the baguette halves with garlic butter.

Heat a large skillet over medium heat and place the toast, butter side down, under the toast. Press down with a spatula to evenly brown them.

Meanwhile, chop the sweet white onions.

Remove the toast from the pan and set aside. Heat a dash of olive oil in an empty pan. When hot, add the chopped onions and cook until tender. Remove the onions from the pan and place them in a small bowl.

Place the rib eye on a cutting board and cut into very thin slices.

Heat another dash of olive oil in an empty skillet over medium-high heat. Let the sirloin become translucent and sear it. Season with salt and pepper and add most of the chopped onions back in. Divide the beef mixture into two mounds in the pan and place half a piece of provolone on each.

While the cheese melts, spread the mayonnaise on the inside of the two toasted baguettes.

Place the bread mayonnaise side down on top of the melted cheese and beef mixture in the pan. Use a spatula to fold the filling into the bread, turning it over to catch anything that might fall out.

Serve Philly Cheesesteak sandwiches warm.
