Prepare to get your hands filthy with this no-bun burger that’s both fast and nutritious! Wrapped in crispy salad leaves with thinly sliced chicken breast fillets, cheddar cheese, onion, tomatoes, and jalapeo aioli. Cook the chicken on the stovetop or, for added flavor, on the grill.

Instructions

  1. Tomatoes and onions should be sliced. Lettuce leaves should be trimmed and washed.

  2. In a small dish, combine the ingredients for the jalapeo aioli. Remove from the equation.

  3. Horizontally cut the chicken breasts in half. You can cut the chicken breasts into three pieces if they are large. Season with salt and pepper to taste.

  4. In a large frying pan over medium-high heat, melt the butter. Add the cut chicken once the butter has stopped sizzling. Fry them on both sides until they’re done (no longer pink in the middle).

  5. Reduce the heat to low and top the chicken with the cheese, continuing to cook until the cheese begins to melt.

  6. Put a salad leaf on each plate, then put the chicken on top, a dollop of the jalapeño aioli, tomato, and onion. Finish off with a salad leaf.

 

I’ve made keto chicken burgers before, but I’ve never made a jalapeño aioli for it.  Aioli is a popular sauce found on many chicken burgers and it’s usually just made with mayonnaise, garlic, and herbs.  Some people add onion, lemon juice, and/or celery to give it a kick; I decided to make a jalapeño version with my new aioli blender and it turned out great.  The jalapeño aioli had just enough kick that my husband could actually eat them without any sauce.  I especially like how the aioli mixed with the ground chicken, and it made the burger so much more flavorful..
