Frittata with goat cheese and mushrooms on the keto diet



Do you like quiche? This frittata has all of the taste of a traditional frittata without the crust (or the hassle)! So fill up on mushrooms, spinach, and scallions, all topped with creamy goat cheese. It’s a one-skillet keto feast that’s rich, vegetarian, and delicious!




  1. Preheat the oven to 350 degrees Fahrenheit (175 degrees Celsius).

  2. In a mixing dish, crack the eggs and whisk them together. Add grated or crumbled cheese to the mixture. To taste, season with salt and pepper.

  3. Make wedges out of the mushrooms. Chop the scallions into small pieces.

  4. In an oven-safe pan, melt the butter and sauté the mushrooms and scallions for 5-10 minutes, or until golden brown.

  5. Add the spinach to the pan and cook for an additional 1-2 minutes. Salt & pepper to taste.

  6. Fill the skillet with the egg mixture. Bake for approximately 20 minutes, or until golden brown and firm in the center, with the pan uncovered in the oven.

  7. Serve with olive oil and leafy leaves.
