  1. Preheat the oven to 350 degrees Fahrenheit (180 degrees Celsius). Grease a 13-by-9-inch (33-by-23-centimeter) casserole dish.

  2. In a frying pan, heat 2/3 of the olive oil over medium heat.

  3. Each chicken thigh should be cut in half diagonally. Add 1/2 teaspoon garlic powder, onion powder, salt, and pepper to taste. Cook until the chicken is gently browned and reaches an internal temperature of 165°F (74°C) in the pan. Remove the pan from the heat and put it aside.

  4. In the same pan, heat the remaining oil over medium heat. Combine the mushrooms, spinach, and the remaining garlic powder in a large mixing bowl. Sauté until the edges of the mushrooms are browned and crunchy. To taste, season with salt and pepper. Remove the pan from the heat and set aside the mixture.

  5. Cut the chicken thigh into bite-sized pieces using a knife. In a large mixing bowl, combine the chicken, cauliflower rice, mushroom mixture, and 1/3 of the mozzarella. Combine all ingredients in a mixing bowl and put aside.
