I would normally not post a recipe for a burrito. But this recipe for a keto beef burrito with pico de gallo may be the exception, since the burrito is so good. And this is a great way to make a keto beef burrito. If you’re on keto, you will find this recipe for a keto burrito as excellent as it is.

Pico de Gallo – A beautiful mix of roasted bell pepper, onion, and tomatoes, the pico de gallo is a staple for many Mexican dishes. It is an especially tasty mix and it great on everything from tacos to sandwiches and dips! I love to use it as a topping for tacos and burritos, or on top of a salad.

Pico de Gallo and keto beef burrito



If Taco Tuesday is your favorite day of the week, try these keto burritos prepared from scratch. Served with a zingy Pico de Gallo and a filling of succulent meat and cauliflower rice. Immediately devour or smuggle inside your picnic basket.

Medium (15 + 40 m)



  1. Tomatoes should be cut in half. Scoop out and discard the pulp and seeds with a spoon, then coarsely chop.

  2. In a mixing dish, combine the chopped tomatoes, onion, jalapeos, and cilantro. Season with salt and pepper after adding the lime juice and olive oil. Combine the ingredients and put them aside.


If you’re short on time, make the egg wraps ahead of time. You may either freeze them or keep them in the refrigerator for up to three days with wax or parchment paper between each wrap. The meat is the same way. Make a big batch and divide it up into tiny pieces to freeze.

Pico de Gallo is just as delicious — if not better — the following day.
