These are the sweetest and tastiest sugar-free marshmallows. They are made with herbal gelatine and no unhealthy sugar, so they are actually nutritious. Have you ever imagined eating healthy marshmallows?

I wasn’t going to do anything free for the blog. However, I have trouble with high blood sugar levels. This turnout made me look at all the things I cook.

In the beginning I felt a little discouraged. I told myself I had to give up everything I love now. Which is sad enough for a connoisseur.

This recipe is just an attempt to prove that I can enjoy the food I’m used to, as long as I want a few adjustments.

Ingredients

This recipe does not use eggs like traditional marshmallows. All softness comes from the fact that the jelly is beaten by the way the syrup is made from sweeteners and water.

Sweeteners: Xylitol and Allulose

There are several sugar-free options. I found the best results with a mixture of xylitol and allulose. These two powdered sweeteners are natural sweeteners, but they are calorie-free and have no effect on blood sugar levels.

These marshmallows are light and fluffy, just like the real thing.

Gelatin

I have chosen Vital Protein plant collagen. I like the idea of eating some more marshmallows. What could be better?

Step-by-step instructions

Preparefor

  • Prepare the cake tin: Place a 9×9 cake tin with plastic foil and coconut oil to prevent it from sticking.
  • Gelatine flour: Place the gelatine and a ½ cup of cold water in a stand mixer, whisk and let stand while making the sugar syrup.

  • Add the remaining water from ⅔ in a medium heat pot.
  • Add the xylitol and allulose to the pot. Bring the mixture to the boil. Bring the sugar syrup to 240°F using a condensation thermometer.

Create marshmallows in your stand mixer

  • Mixing at low intensity : Place the blender with the whisk on the stand. Set the blender to low speed and cut the gelatin mixture. Sometimes I use a spatula for this step. You want to loosen and break the gelatin from the sides of the blender so that the sugar syrup can melt evenly. Try it a few minutes before the sugar syrup reaches its maximum temperature.
  • Add sugar syrup: Slowly add the hot sugar syrup while the blender is still at low speed. Mix at low speed and slowly begin to increase speed as the mixture cools slightly. This. Three to five minutes.
  • Mix well: As soon as the mixture is well mixed and starts to soften a little, set the mixture to high. Impact in eight minutes.
  • Add salt and vanilla: For example, you can use a different perfume here. B. Strawberry, lemon or mint. You can also add a few drops of dye to the coloured marshmallows.
  • Keep mixing at a high level: Stir another 3-4 minutes. The mixture will be very sticky.
