Place the pork tenderloin on a baking sheet lined with aluminum foil and alternating pieces of bacon once it has marinated. Place a long wooden stick in the meat stack and top with a pineapple slice.

To keep the meat in place, place a sturdy wooden rod in the middle. To hold the pineapple, cut a thick cube and put it into the top of the wooden pole.

Cut the remaining pineapple into thin pieces. Bake the top of the meat and flip it often to ensure uniform cooking. Remove from the oven and set aside for a few minutes. Serve with corn tortillas, sauces, and pineapple as a side dish.
